For hundreds of years, Pedro Ximenez grapes have been dried under the Spanish sun and concentrated to produce a dessert wine. The vinegar produced from this wine shares these sweet, syrupy characteristics but is balanced by a delightful acidity and a long, full finish. This vinegar shines where a balsamic might, but is less sweet and offers more minerality.
