Gumbo File Powder

Gumbo Filé (pronounced fee-lay) is a traditional spice made from ground sassafras leaves, sometimes blended with thyme for added depth. A staple in Cajun and Creole cuisine, filé is best added at the end of cooking or used as a finishing garnish. It imparts a distinctive earthy flavor and also serves as a natural thickener.
